Blueberry Pineapple Bread

Okay, it’s time for something different on the “snack bread/cake” playing field. Try this one on for size, and don’t forget a nice cream cheese spread to top it off if you want something really decadent!!

Blueberry Pineapple Bread

3/4 cup sugar

1 egg

2 Tablespoons melted butter

3/4 cup Pineapple Juice

2 cups flour

1/2 tsp salt

2 tsp baking powder

1/2 cup drained, crushed Pineapple

3/4 cup fresh or frozen Blueberries

1/2 cup nuts – your choice of variety

Preheat oven to 350 degrees.

Combine sugar and egg; cream together with butter.

Add Pineapple juice. Mix together.

In a separate bowl – combine flour, salt, and baking powder  – THEN add this to the sugar mixture.

Now gently fold in the Pineapple, Blueberries and nuts.

Pour batter into a greased 8″ x 4″ loaf pan.

Bake in a preheated oven at 350 degrees for 1 hour.

Top with butter or cream cheese and serve!


And remember – NO COUNTING CALORIES!!!!

This is a treat, so calories don’t count!!  😉
